3 large carrots, scrubbed
1/4 c. oil
2 eggs
2 c. buttermilk

2 c. yellow corn meal
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder

Directions:
Directions:
Cut carrots into chunks. Place in a blender with remaining wet ingredients. Cover and process until well blended. Sift dry ingredients. Combine with wet mixture in a bowl. Pour into a well greased 8 inch square pan or a round iron skillet. Bake in a hot oven (450º) for about 20 minutes or until top is brown and sides pull away from pan.
