4 - large potatoes, peeled, cooked, cooled to room temperature
1 - medium onion, finely chopped
1/2 tsp each - salt, nutmeg
black pepper to taste
4 TBSP melted butter (margarine)

Directions:
Directions:
1. Grate cooled potatoes by hand into medium bowl and mix in onion and spices.

2. Heat 2 TBSP butter in 8-inch nonstick fry pan over medium heat.

3. Add potato mixture and flatten to cover bottom of skillet.

4. Cook 10 minutes, until bottom surface is well browned. Shake pan frequently to prevent sticking.

5. Carefully slide potato pancake onto large plate. Cover with another large plate and carefully flip.

6. Add remaining butter to pan; slide pancake back into pan with browned side up.

7. Cook 8 to 10 minutes, shaking pan frequently to prevent sticking.

8. Slide onto serving platter and cut into wedges.
