1/2 lb. snow peas, trimmed (3 c.)
2 medium fennel bulbs, halved lengthwise, cored and sliced (2 c.)
(reserve tops for dressing)
2 small heads Bibb or Boston lettuce, torn (about 8 c.)
1 recipe Red Wine - Fennel Vinaigrette:
1/4 c. olive oil
1/4 c. red wine vinegar
2 tsp. snipped fennel fronds
1/2 tsp. sugar
1/2 tsp. anise seed, crushed
1/8 tsp. black pepper
1/8 tsp. salt

For vinaigrette: Combine vinaigrette ingredients in a screw-top jar, cover and shake well. Refrigerate.

In a saucepan, bring 2 quarts of water to boil. Add snow peas. Cook, uncovered, 1 to 2 minutes or until snow peas are bright green and crisp tender. Drain snow peas, rinse under cold water.

In a bowl, toss together snow peas, fennel, and Bibb lettuce. Cover tightly; refrigerate until ready to serve. When ready to serve, toss salad with vinaigrette.
