1 envelope Knox gelatin
¼ cup cold water
5 eggs separated
¾ cup fresh lemon juice
2 tsp grated lemon rind
1 ½ cups sugar
1 cup heavy cream

Directions:
Directions:
Sprinkle gelatin over cold water. Stir until gelatin is dissolved. Let it sit.
Beat egg yolks and put in double boiler, stir in lemon juice, rind and ¾ cup sugar.
Place over boiling water. Cook until thickened. Remove from stove.
Stir in softened gelatin until dissolved and mixture is smooth.
Chill in refrigerator until slightly thickened.
Beat egg whites with the remaining sugar until stiff.
Beat heavy cream until whipped.
Fold egg whites and cream into lemon mixture.
Put in refrigerator to chill.
Serve with extra whipped cream, strawberries, or any fruit you like.
