¼ cup honey
¼ cup vegetable oil
¼ cup unseasoned rice vinegar
1 Tbsp soy sauce
1 tsp sesame oil
1 Tbsp peanut butter
½ ts. salt
1 tsp sriracha hot sauce (or to taste)
1 Tbsp fresh ginger, minced
1 garlic clove, minced
4 cups broccoli slaw (or cabbage)
2 cups shredded carrots
1 red pepper, thinly sliced
½ red onion, thinly sliced
½ cucumber, thinly sliced
½ cup cilantro


Directions:
Directions:
Make the dressing by combining honey, vegetable oil, rice vinegar, soy sauce, sesame oil, peanut butter, salt, sriracha hot sauce, fresh ginger and garlic in medium bowl. Stir with a whisk until peanut butter is dissolved. Set aside.

Combine all of the slaw ingredients in a large bowl. Add dressing and toss well. Let sit at least 10 minutes so vegetables have a chance to soak up the dressing. Taste and adjust seasoning if necessary. Serve cold.
