1 head iceberg lettuce
2 Tbsp vegetable oil
2 chicken breasts, chopped into small pieces
1 tsp. garlic, minced
1 yellow onion, finely chopped
2 cups mushrooms, sliced
1 red pepper, sliced thinly
1 can water chestnuts (225g), sliced
130 g stir-fry egg noodles
2 Tbsp. soy sauce
5 Tbsp. hoisin sauce, more if desired
1 Tbsp. chili sauce, adjust to taste
1/3 cup cilantro
¼ cup peanuts

Unwrap lettuce into “cups” and wash thoroughly. Heat oil in a wok over medium high heat for about a minute, add chicken and stir fry until no longer pink. Add garlic, onion, mushrooms, red pepper and chestnuts. Fry for about a minute. Add noodles and separate them as they become soft; cook for about 5 minutes. Add soy sauce, hoisin and chili sauce. Remove from heat and add cilantro and peanuts. To assemble, spoon the noodle mixture into a lettuce cup, wrap and enjoy.
