3 large onions
2 Tbsp. vegetable oil
3 large carrots
1 red pepper
2 large tomatoes
2 cans chickpeas, rinsed
1 tsp. pepper
2 bay leaves
2 Tbsp. garlic, chopped
2 tsp. ginger powder
1 tsp. cumin
1 tsp. chili powder
½ tsp. turmeric
1 Tbsp. garam masala
salt to taste
1 cup water

Directions:

Heat oil in a large pot. Chop onion, carrots, red pepper and tomatoes into bite sized pieces and fry until onions are lightly golden. Add chickpeas, garlic, all spices and water. Mix well and simmer for 15 minutes.
