8 medium potatoes, cut in cubes or wedges
2-4 Tbsp olive oil
1 tsp salt
¼ tsp pepper
1 tsp thyme
1 tsp oregano
1 tsp basil
1 tsp garlic

Directions:
Directions:
Preheat oven to 450° F. In a large bowl, add spices and oil to potatoes and mix thoroughly. Spread potatoes on a cookie sheet lined with parchment paper. Bake 45 minutes to 1 hour until potatoes are fork tender.
