1/3 cup lard
1/3 cup butter
1 cup cornmeal
1 cup milk
3 cups water
1 large onion
2 eggs
1 tsp salt
1 tsp sugar
¼ tsp ground spices

Directions:
Directions:
In a large heavy Dutch oven, melt the fat and add finely chopped onion. Saute onion and add butter. Add the cornmeal, a little at a time. Keep mixing, until all the cornmeal turns hot. Bring the milk and water to a boil; pour over the cornmeal mixture, mixing well.Season with sugar, salt and the spices. Beat eggs and add to cornmeal mixture, mixing well. Bake in a moderate 300°F oven for 1 hour.
