2 Tbsp butter
1 small onion, minced
1 tsp salt (sea salt is best)
1cup cornmeal
4 cups milk, heated
5 eggs
1 cup sour cream (optional)
Sliver of green pepper (adds flavour, optional)

Directions:
Directions:
Melt the butter in a 2 quart casserole; add minced onion. Fry lightly and add salt and cornmeal. Stir. Save 1 cup of heated milk and to this, add 5 eggs and sour cream. Blend together in blender. Set aside. Stir the remaining milk into cornmeal mixture slowly, cooking on medium heat to thicken. When thickened, add the egg mixture. Blend. Put cornmeal mixture into preheated oven and bake, uncovered, at 350°F for 1 hour, or until golden brown.
