½ cup butter
1½ tsp salt
1 medium onion,chopped
½ tsp pepper
1 cup cornmeal
3½ cups milk, scalded

Directions:
Directions:
Put butter into a heavy saucepan and add the chopped onion. Saute until tender, but not browned. Remove onion from the fat. Add the cornmeal, salt and pepper; mix well. Fry for 5 minutes to lightly brown, stirring constantly. Add onion, then add scalded milk, about 1/2 cup at a time, while stirring. Blend well until there are no lumps. Pour into a casserole and bake in a 325°F oven for 3/4 hour to 1 hour. Serve hot.
Notes: Vegetable oil may be used instead of butter. You can use 2 1/2 cups of boiling water and 1 cup of milk for the 3 1/2 cups of milk. An egg can be added (beat egg and milk together)
