Ingredients:  
Leftover roast beef, as much as you have available, cut into pieces
1 can 7-Up (or Ginger Ale, or Orange Juice)
1 onion, chopped
2 cloves garlic, minced
1 tbsp vegetable oil
1 red (or yellow or green) bell pepper, seeded and chopped (or 3 stalks celery, thinly sliced)
3/4 cup grated cheese
1 tbsp dry mustard
Salt & pepper to taste

In a large skillet over medium heat, sauté onion and garlic. Add bell pepper (or whatever) and cook for several minutes until tender. Add 7-Up (or whatever), bring to a low boil for several minutes. (add some cornstarch to thicken the sauce if you like) Add roast beef pieces to skillet, and heat for several minutes, stirring occasionally. Add dry mustard, salt & pepper to taste. Spread grated cheese over beef and “whatever” mixture, cover and heat until cheese is melted
Serve over toast (or pasta, or whatever)
