3 sides small meaty pork spareribs
1/4 c. sugar, 1 tsp. salt OR
Chili Ribs Rub:
Mix together 3 T. chili powder, 2 tsp. oregano, 1 tsp. dry mustard, 1 tsp. salt
Island Barbecue Sauce:
1/2 c. soy sauce
1/2 c. catsup
3 T. brown sugar
1 egg size ginger root, grated
1tsp. MSG
Mix all ingredients; let stand overnight before using

Directions:
Rub spareribs on both sides with sugar and salt or Chili Ribs Rub; let stand 2 hours. (Use smoked salt if cooking in the oven.) Brush with Island Barbecue Sauce; let stand at least one hour---better longer.

Barbecue or hang in a Chinese barbecue oven for about an hour. To barbecue in a range oven: prepare ribs as above and place meat side up, on rack in shallow pan. Bake in very hot oven (450º) 15 minutes; pour off fat. Continue baking in a moderate oven (350º) 1 hour or till done, turning ribs and brushing with barbecue sauce a few times. Cut into serving pieces.
