Beef Stroganoff Recipe

1 1/2 lbs. beef top round
2 T. butter or margarine
1/3 c. finely chopped onion
1 4 oz. can sliced mushrooms, undrained
2 beef bouillon cubes
1 1/2 c. water
Dash pepper
4 tsps. flour 1/4 c. cold water
1/2 c. sour cream
1 T. flour
Add more water if needed

Trim fat from the meat and cut into narrow strips about 1/2 inch thick (I find it easier to slice a slightly frozen cut of meat). Melt butter in a heavy skillet or Dutch oven over moderate heat. Add meat and brown pieces lightly. Remove meat; add onions, cooking till tender. Add meat, mushrooms, bouillon cubes, the 3/4 c. hot water and pepper. Cover and cook over very low heat 50-60 minutes. Remove meat from skillet. Blend together the 4 tsp.flour and 1/4 c. cold water; stir into drippings in the skillet making a thickened gravy. Stir together sour cream and 1 T. flour. Gradually add about 1/2 c. gravy mixture to the sour cream and stir, then add this mixture to the pot with the rest of the gravy. Cook and stir constantly over low heat until sauce just starts to bubble. Add meat and just heat through. Do not boil! Serve over hot egg noodles.
