Veloute Sauce, using fish stock
2 egg yolks
1 T. lemon juice
Salt, pepper and cayenne pepper to taste

Directions:
Following receipe for Veloute Sauce using fish stock, beat half of the hot sauce into 2 egg yolks, then beat mixture into remaining sauce. Blend in 1 T. lemon juice and spices.
