Sweet Potato Bread Recipe

2⅔ cups sugar
⅔ cup oil
3½ cups sifted flour
½ teaspoon baking powder
½ teaspoon cinnamon
1 cup chopped dates
1 teaspoon vanilla
4 eggs
1½ to 2 cup canned sweet potatoes with some liquid-(Mamma used fresh baked)
2 teaspoons baking soda
1½ teaspoon salt
1 cup chopped pecans
⅔ cup water (I use the liquid from the potatoes)

Preheat oven to 350º.
Mix sugar, oil and sweet potatoes. Add eggs ONE AT A TIME - beat well.
Add dry ingredients to sifted flour. Mix nuts and dates in flour. Add to potato mixture. Add water (potato juice) and vanilla and beat until well mixed

Grease and flour ( I use Bakers Joy instead) 3 tall potato cans. Use a paper towel to get into the groves of the can. Loaf or tube pans can also we used.

Fill cans ½ full. Place cans on cookie sheet and bake at 350º for about an hour.

This is a very old recipe of my mother's - Eunice Little. She and I used to use coffee cans, but they don't work anymore. That's why I started using potato cans. Peel the paper off the can, spray with oil and flour (I use Bakers Joy), using a paper towel to make sure all creases are covered.

This keeps well for a long time. Freezes well also.

I love it toasted and buttered with my coffee.
