2 1/2 lb. sugar per gallon of wine
50 gallon barrel = 125 lb. sugar
18 gallons of pure Mustang grape juice

For clear wine, don't crush grapes. Put in barrel with a little sugar and water and let ferment. Grape peels will separate from juice. Plug in bottom. Peels float to top. Drain juice off from bottom. No "raking" necessary. Takes 7 days for juice to separate. Works faster in hot weather.

Note from the Receipts published in 1977 by Castro Colonies Heritage Association: As boys, Reynold and his brothers and friends used to steal wine from their Grandpa's smokehouse. "If you've never stolen wine from a smokehouse, you haven't lived!" They used to recite, "Bim Bam Bim Doodle Das, Zuckersuess."

The smokehouse was always locked. The boys would lift it on one side, and one by one, crawl inside. One night Grandpa heard them and came out. The boys dropped the smokehouse, trapping brother Dan Keller in the smokehouse.

Every time they'd steal some of their Grandpa's wine, they would add water to the barrel to cover up their crime. Once Grandpa finally remarked to Grandma, "You know, this wine's getting pretty weak!"
