10 oz large elbow macaroni
2 T canola oil
3 Cloves garlic, crushed
2 1/4 c chicken stock, divided
1/2 c skim or fat free milk
8 tsp flour
4 oz low fat milk
1/2 tsp salt
1/4 tsp black pepper
cooking spray
3/4 c sharp cheddar cheese, shredded

Directions:

1. Cook past according to directions.

2. Preheat broiler to high.

3. Heat large pan over medium heat. Add Oil, swirl to coat. Add garlic, cook 3 minutes or until garlic is fragrant, not brown. Stir in 1 c stock; bring to a boil. Cook 1 minutes. in separate bowl, combine remaining 1/14 stock, milk, and flour; stir with a whisk until flour dissolves. Add milk mixture to garlic mixture, stir with whisk. Bring to a boil; cook 5 minutes or until mixture begins to thicken. Remove milk mixture from heat; add cream chees, stirring until smooth. Stir in salt and pepper.
4. Add to cooked pasta and toss till well coated. Let stand 5 minutes. Pour pasta mixture into a 2 quart baking dish coated with cooking spray. Sprinkle cheddar evenly over pasta mixture. Broil 3 minutes or until cheese melts and begins to brown. Let stand 5 minutes.

Colin loves this, even cooked it for himself, although the first time he did so, he had to call me to ask what it meant to preheat broiler.
