1 cup uncooked rice
1 tablespoon sugar
2 large cans cream corn
1 cup grated cheddar cheese
2 jalapeno peppers, chopped fine (3 heaping tablespoons)
1 medium onion chopped (1 cup)
1 cup chopped celery
1 bell pepper chopped (1 cup)
2 sticks margarine

Directions:
Directions:
Preheat oven to 350º

Cook rice until barely tender, drain.

Sauté onion, pepper and celery in margarine until tender. Add sugar, corn, cheese, and jalapeno. Stir in rice. Mix well. Pour into dish. Bake COVERED at 350º for 30 minutes.
