1/2 lb (2 sticks) of butter
1 cup of firmly packed light brown sugar
1/2 cup of granulated sugar
2 eggs
1tsp. of pure vanilla extract
1 1/2 c. of all purpose flour
1 tsp. of baking soda
2 tsp. of freshly ground cinnamon
1/2 tsp. of salt
3 cups of rolled oats
1 cup of California golden raisins
1 cup of chopped cashews
2 Tbsp. of Amaretto liqueur

Directions:
Directions:
1. Cream sugars and butter together.
2. Beat in eggs and vanilla.
3. Sift flour, baking soda, cinnamon, and salt. Then mix into the mixture of creamed ingredients.
4. Stir in the oats, raisins, and nuts. Add the Amaretto and mix well.
5. Chill the dough for 1-2 hrs. This results in thick, chewy, yummy cookies.
6. Heat oven to 350 º
7. Drop rounded portions (amount dependent on the size cookie you like) on a prepared cookie sheet. Parchment lined or sprayed with Pam.
8. Bake the cookies for 10 to 15 minutes, or until they are golden brown.
9. Cool the cookies for 1 min. on the cookie sheet and then move to a wire rack to cool. For testing purposes it is okay to now take a bite.

Dianne says "Jim is the expert on Oatmeal Cookies given that he has sampled hundreds of them!" It's true that the oatmeal cookie is my favorite cookie, and I sample them at every opportunity. I think that there is no such thing as the best recipe...they all have different characteristics. The use of golden raisins and cashews results in a milder taste than dark raisins and walnuts. Experiment with the amount of Amaretto for a taste variation not usually found in this type of cookie.
