Mix soup crackers with breadcrumbs, chopped parsley, garlic, grated cheese, pinch of salt and pepper. Add olive oil to mixture to blend. Use your judgment on amounts, adding enough oil to bind mixture together.

Wash artichokes, use a sharp knife or scissor to cut off sharp points. Then use fingers to open leaves and fill with stuffing. Drizzle with olive oil.

Artichokes are very tough (Grandma uses the pressure cooker) so you must par cook them stuffed in the microwave first if no pressure cooker. Once par cooked put a few inches of water in pot, fill with artichokes but ensure not fallen on side, then steam them.
