Ingredients:
Ingredients:
3 lb. corned beef brisket, flat cut preferred
1 bay leaf
1 garlic clove
water

Directions:
Directions:
Place corned beef in pressure cooker. If too large, cut in half.
Add season pkg that comes with meat (I tie this in a coffee filter with a string, so the seasonings go into the water). Put in the whole bay leaf and garlic.
Add water so just even with the top of the meat.
*Using an electric pressure cooker, lock on lid. Set on low pressure for 1 hour. This will take about an hour and a half because pressure has to come up and then escape. If you don't have an hour, set on hi pressure about 35 minutes.
*Using stove top pressure cooker: turn on burner and bring to a boil. Put on cover and rocker and cook until rocker starts rocking. Keep at med to low rocking motion and cook 1 hour. Turn off burner. Allow pressure to escape on it's own.
Both methods;
Carefully open pot tilting lid away from you. Remove meat and let rest 5 minutes. Slice against the grain with electric knife.
