1 slice whole wheat bread
4 ounces lump crab meat, drained and shell pieces removed
1/4 tsp black pepper, divided
2 tsp butter, divided
1/4 cup finely chopped shallots
4 (6 oz.) flounder fillets
1/4 teaspoon salt
Cooking spray
Lemon wedges (optional)

Directions:
1. Preheat oven to 450º.
2. Place bread in a blender or food processor; pulse 10 times or until course crumbs measure 1/2 cup. Combine breadcrumbs, crab meat, and 1/8 tsp pepper in a bowl.
3. Heat 1/2 tsp butter in a small nonstick skillet over medium heat. Add shallots, and cook 3-4 minutes or until tender. Add shallots to breadcrumb mixture, and toss gently.
4. Sprinkle fish evenly with salt and remaining 1/8 tsp pepper. Place 1/4 of crab mixture onto widest part of each filet. Carefully roll up. Place fish seam sides down in a baking dish coated with cooking spray. Bake at 450º for 15-18 minutes or until fish flakes easily.
5. Microwave remaining 1.5 tsp butter for 20 seconds on high or until butter melts; drizzle over cooked fish. Serve with lemon wedges if desired.
