2 tsp olive oil
2 onions chopped
2 carrots peeled and chopped
2 stalks celery, chopped
Ham hocks
2 - 3 cups chopped ham pieces
4 bay leaves
12 cups water
500 gr. yellow split peas (16 oz)
1 tsp dried thyme
1 cup potato flakes to thicken

Directions:
Directions:
Heat oil and sauté onions, carrots, and celery. Add ham hocks, chopped ham, bay leaves, and water. Bring to a boil and simmer partially covered for 2-3 hours. Remove ham hocks and bones. Shred meat and return to stock. Add peas and thyme? Add potato flakes. Simmer uncovered for 1 1/2 hours or until peas are mushy.
