3 tablespoons brown sugar
1 tablespoon dairy sour cream
1/3 cup broken pecans

3 small bananas
1 slightly beaten egg
1/2 cup granulated sugar
1/4 cup cooking oil
1 1/2 cups packaged pancake mix

Directions:
Directions:
In a small bowl stir together brown sugar and sour cream. stir in pecans. Set aside. Mash bananas. In a medium ming bowl stir together egg, granulated sugar, oil, and mashed bananas till well blended. Add pancake mix, stirring just till moisted. Grease muffin cups or line with paper bake cups; fill 2/3 full with batter. Drop 1 teaspoon of the pecan mixture atop each muffin. BAKE in a 400º oven for 12 to 15 minutes o to golden brown.

This muffin can't be beat for conveience...It's based on pancake mix. For a change of taste, try buttermilk mix. Quck, easy & Delicious.
