Gravy (use gravy recipe)
Oil
Breadcrumbs
Mozzarella Cheese
Egg
Parmesan

Directions:
Directions:
Slice Eggplant. Heat oil in Pan. Dip eggplant in beaten egg and then in breadcrumbs. Fry until brown and flip over. Continue until all are done. Preheat oven to 350º. Layer a 13x9 pan with gravy. Add a layer of eggplant, parmesan, mozzarella and gravy to pan. Repeat. Bake for 20-30 minutes.
