1 c. warm potato water
2 package active dry yeast
4 T. honey
6 1/2 c. unbleached flour
1 c. warm milk
1/2 c. melted butter
2 eggs, beaten lightly
1 c. riced or thoroughly mashed potatoes
2 tsp. salt
2 c. bread flour

Directions:
Make potato water by placing 2 large potatoes, peeled and diced, into a saucepan. Cover with water, bring to a boil and cook until potatoes are mushy. Drain the potato water into a separate container and let cool. Thoroughly mash the potatoes and set aside for later.

Add yeast to the slightly cooled potato water and stir until yeast is dissolved. Then add 2 T. of the honey. Beat in a cup of the flour until a smooth batter results. Cover the dough and set aside for about 30 minutes.

Blend the milk, butter, eggs, potatoes, salt, the remainder of the honey in a large mixing bowl. Add the risen dough and stir well. Gradually add flour until the dough is soft and workable and pulls away from the side of the bowl.

Pour the dough onto a floured surface and knead for 8-10 minutes. Round the dough into a ball and place in a warm, buttered bowl. Be sure to coat the entire ball with the butter. Let the dough rise for about an hour or until it has doubled in size.

Butter 3 loaf pans. Preheat the oven 350º F. Punch down the dough .... and place on a lightly floured surface. Knead the dough lightly for only a minute or so. Divide the dough into 3 equal portions and form them into loaf shapes. Bake 30 minutes or until golden.
