4 large baking potatoes, cleaned and baked
1/4 cup butter
2/3 cup milk
2 tablespoons chopped onion (optional)
1/2 teaspoon salt
1/8 teaspoon black pepper
3/4 cup grated, sharp cheddar cheese
Paprika (optional)
sour cream and real bacon bits (optional)

Bake potatoes for 45 minutes to 1 hour, cut in half. Wait until potatoes have cooled and scoop out the insides, reserving the shells. In large bowl, using an electric mixer, beat potatoes and butter until creamy. Gradually beat in milk; stir in onion (optional), salt and pepper. Spoon mixture into reserved shells. Place shells in baking dish. Sprinkle cheese on top of shells. Bake at 375º for 20 to 25 minutes or until heated through.

You can sprinkle with paprika, or add bacon bits on top. A spoonful of sour cream is good also.
