Green, red, or yellow bell peppers (one pepper per person)
1 onion - chopped
Vegetarian crumbles or ground beef
1 Can tomato sauce
Rice - Cooked per pkg instructions
Salt and pepper to taste
Grated Parmesan cheese (optional)

Directions:
Directions:
Sauté onion and ground beef or vegetarian crumbles until done. Add rice, salt and pepper, and half can of tomato sauce and mix well. Slice peppers in half and remove seeds. Fill each half with mixture and place in baking dish. Pour remaining tomato sauce over each half and add a small amount of water to dish. Bake uncovered at 375º until peppers are soft and tops are a little brown (about 45 minutes). Sprinkle Parmesan cheese on top before serving.

This is a meal in itself but could be served with a salad and bread.

Adjust quantities of ingredients according to number of peppers being prepared.
