3 cups chopped or shredded chicken
1 can Cream of Chicken or Celery Soup
1 tablespoon lemon juice
3/4 cup chopped celery (if using soup, you don't need the celery)
3/4 cup mayonnaise
2 teaspoon chopped onion (optional)
1/2 cup grated sharp cheddar cheese
3/4 cup slivered almonds (optional)
1 (small) jar diced pimentos and juice
3 hard boiled eggs (chopped, optional)
2 cups crushed potato chips

Directions:
Directions:
Mix all ingredients except potato chips. Pour in a buttered deep casserole dish and sprinkle crushed potato chips on top. Bake at 350º for 30 minutes or until really bubbly.
