2 qts. fresh or frozen Blueberries
1 1/2 c. celery, finely chopped
1 1/2 c. green pepper, finely chopped
1 garlic clove, minced
1 carrot, minced
1 1/2 tsp. salt
1 1/2 tsp. pepper
1/2 to 1 c. honey
2 T. molasses
1 c. vinegar
1 tsp. paprika
1 tsp. cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. dry mustard
1/2 tsp. ground cloves
1/2 tsp celery seed
1/2 tsp. ginger
Cayenne pepper to taste

Thaw blueberries if frozen, do not drain. Puree berries in a food processor. Combine celery, onions,green pepper, garlic and carrots in a large saucepan; add honey, molasses, vinegar, salt, pepper and spices. Add pureed berries; mix well. Simmer over medium heat stirring occasionally until thickened. Serve with chicken, pork or fish.
