Nut 1/3 c. toasted, cooled and ground: pine nuts, almonds, walnuts, cashews, pecans, hazelnuts, pistachios, sesame seeds, sunflower seeds, pepitas
Base 3 c.: choose up to 3 basil, parsley, cilantro, mint, collards, kale, arugula, watercress, spinach, romaine
Seasonings 1/2 to 1 t total choose up to 3 (add 1/4 t. salt): garlic, lemon zest, orange zest, red pepper flakes, thyme, oregano, tarragon, rosemary
Cheese 1/2 c: Parm, asiago, grana padano, pecarino, manchego, gruyere,aged gouda, aged cheddar
Finish pesto by slowly pour 1/2 c. GOO pulse to incorporate. Transfer to bowl and stir in 1/4 to 1/2 c. optional:
mascarpone, sun dried tomatoes, olives, roasted red peppers, ricotta
