1/4 cup finely chopped onions (optional)
6 teaspoons butter
2 tablespoons flour
1/2 cup water
8 ounces of shredded Colby Cheese (can use Cheddar)
2 bunches broccoli cooked 4 to 5 minutes (can use 2 packs of thawed and drained frozen broccoli
3 well beaten eggs
1/2 cup cracker crumbs

Directions:
Directions:
If using onions, cook in 4 teaspoons butter. Stir in flour, and add water. Cook until mixture comes to a boil. Blend in cheese and broccoli, add eggs and mix gently. Pour into a buttered 2-quart baking dish.

Top with cracker crumbs and remaining butter. Bake in 325º oven for 30 minutes.
