Directions:1 cup So Delicious Coconut Milk Unsweetened Yogurt 1 cup Mango pulp or equivalent cubed ripe Mangoes (1/4 cup more for more mango-ey Lassi) 1/4 cup almond milk or other non dairy milk 1/4 cup chilled water or Ice cubes (less or more for desired consistency) a pinch of salt 1 Tablespoon raw sugar or maple syrup (less or more depending on the sweetness of the mango pulp.) 1/2 teaspoon lemon juice
VARIATIONS Add 1/4 tsp cardamom powder, or saffron strands or rose essence or vanilla.
HOW TO Blend all the ingredients till sugar dissolves. Taste and adjust sugar, add lemon juice and blend again. Serve chilled.
A big pitcher of Mango Lassi is deliciously soothing served up an hour after meals.
NON-DAIRY YOGURT MADE AT HOME Non dairy yogurt can be made at home too, with any thick non dairy milk. Cashew milk and a probiotic powder make a fine yogurt. Add 1 capsule for 2 cups warmed up (105 degrees F) liquid. Then just leave the mix to set in an oven set to Bread proof (100 degrees F) for the first few hours until fermented and set. |
