Whole Chicken
3 Stalks of Celery, cut into thirds
1 1/2 Lb. of Sausage ( I use Bass Farms mild)
tbsp. Salt
tbsp. Pepper
tbsp. Poultry Seasoning
2 cups long grain Rice ( I use Mahamma)

Directions:
Directions:
Cover Chicken with Water 3/4 way up.
Add Sausage (break up sausage)
Add Celery & Seasoning. Bring to a boil, reduce to med heat.
Cook till Chicken is done, about 30 minutes, *
Remove Chicken and cool till you can debone it.
Add more Water till level is back to about what you started with, about 1 1/2 - 2 cups.
Bring to boil and add Rice.
Cover and simmer 20 minutes.
Add Chicken back to pot.

* check the Chicken by poking a knife in it and see if the juice runs clear, if it's a little pink it will need to cook more.
Also, you should be able to see the legs starting to pull away.
