1 (3 ½ lb) chicken cut up
1 chicken neck and gizzard (do not use liver)-- I never use
4 celery stalks, chopped
3 large sweet onions, chopped
6 carrots, peeled and chopped
2 medium parsnips, chopped
2 leeks (white bottoms only), chopped
1 head fresh dill
2 tablespoons of Kosher salt
½ tablespoon ground black pepper

Directions:
Directions:
Place cut-up chicken along with celery, onions, carrots, parsnips, leeks and dill in a large pot.

Add enough cold water to cover the chicken (about 4 cups).

Add two tablespoons kosher salt and ½ tablespoon ground pepper.

Bring to a boil over high heat.

Turn down heat to simmer. Skim off any fat that rises to the surface with a large spoon or skimmer.

Cover the pot and simmer for 2 hours, skimming occasionally.

Turn off heat and let it cool down enough to handle.

Take out chicken and remove meat from bones. Return boneless chicken to soup.

Reheat and season to taste with salt and pepper.

Serve with noodles, kreplach or matzo malls.
