1/2 cup quinoa
1 cup frozen shelled endamame beans,thawed
1 cup frozen corn niblets, thawed
1/2 cup cherry tomatoes
1/4 cup fresh cilantro
1/4 cup lime juice
2 tbsp olive oil
salt
pepper

Directions:
Directions:
In small saucepan combine quinoa and 1 cup water.bring to a boil and reduce heat. Cover and simmer for about 15 minutes or until water is absorbed. Remove from heat and set aside.
Slice tomatoes in half and then combine endamame, corn, tomatoes, and cilantro. Add quinoa and toss to combine.
Add lime juice and olive oil. Toss to coat.
Season to taste with salt and pepper.
