6 oz. uncooked Fettuccine
6 T. butter
2 C. whipping cream
1 C plus 4 T. grated Parmesan cheese, divided
2 egg yolks, lightly beaten
1/4 t. salt
1/8 t. each pepper and ground nutmeg

Directions:
Directions:
Cook Fettuccine according to pkg. directions.
Meanwhile, in saucepan, melt butter over medium-low heat.
Stir in the cream, 3/4 C. Parmesan cheese, egg yolk, salt, pepper
and nutmeg. Cook and stir over medium low heat until a thermometer
reads 160 degrees. (Do NOT Boil.) Drain fettuccine; top with Alfredo sauce and sprinkle remaining Parmesan cheese over all.
