Nonstick cooking spray
2 Cup sweet potatoes, cooked and mashed. Do this first
3/4 granulated sugar
4 egg whites
1/4 cup 2 percent milk
2 tsp cornstarch
1/4 tsp cinnamon
1/4 tsp vanilla

1/2 cup brown sugar
4 T butter
3 T all purpose flour
1 -8 oz can crushed pineapple, drained

Preheat oven to 350. Spray a souffle dish or casserole dish with cooking spray. In a large bowl, using a mixer on the lowest setting beat together sweet potatoes and sugar add egg whites, milk, cornstarch, cinnamon and vanilla. Beat until light and fluffy. Pour in dish. In a small microwave dish melt butter and brown sugar together for about 30 sec melt it. Stir in flour, and pineapple and drizzle over the sweet potato mixture. Bake 30-35 minutes.
