1 lb pork tenderloin, sliced into 1/4" medallions
1 lb chicken breasts, sliced into 1/2" pieces
1 tbsp olive oil
1 c onion, finely chopped
1 green pepper, chopped
4 tomatoes, seeded, skinned and chopped
1 lb mushrooms, sliced
1 garlic clove, minced
1 c rice
1/8 tsp saffron threads
1 c white wine
1 c peas
1/2 lb scallops
1 - 2 lb shrimp, deveined and shells removed
1/2 lb sole sliced into pieces

Optional:
Fresh clams in shells

Directions:
In a large skillet, saute the pork and chicken pieces until lightly browned. Remove the meat from the skillet, add the onion and mushrooms cook for 5 - 6 minutes.

Return meat to skillet and add all the other ingredients except for seafood, cod and peas. Cover skillet. Cook until the rice is ready, about 20 minutes and add the seafood, cod and peas. Cook about 10 minutes or until the seafood and fish are cooked. Serve immediately.
