Soak 1 pkg. of Navy Beans over night, Drain and put in slow cooker.
Add:
1 Carrot, finely diced
1 Stalk of Celery, diced
1/2 cup Chopped Onion
2 tbsp. Olive Oil
3 cup Low Sodium Chicken Broth (May need more or less depending how "soupy" you like your beans
4 oz. Ham, Chopped in chunks

Cook all day and be prepared for a yummy smell when you come in from work. Add cornbread and you have a great evening meal. (Follow the directions above about soaking the beans overnight. Combine all together and cook in a crockpot on high until beans are tender. 4 or 5 hours.

Before the automatic washing machines were in every house Saturday was always laundry day. Mother (Lucile Shaklee) had to boil the water on the stove to add to her washing machine so it was always a day she couldn't use much of the stove. Every Saturday was Ham and Beans day. (She even dumped an entire kettle of boiling beans over my head one time! Not much for the hair-do but sure made Daddy move quickly!) I've made some adjustments to Mother's recipe but hope you will try these some day when you are REALLY busy.
