1 - 9 inch deep dish pie crust, pre-baked
3-5 tomatoes, peeled
Italian dry seasoning
1 cup mayonnaise
2 cups grated cheddar cheese
Salt and ground black pepper to taste

Directions:
Pre-heat oven to 350º.

Slice tomatoes, sprinkle with salt, and lay in collander to drain for 5-10 minutes. Layer tomatoes in pie crust and sprinkle Italian seasoning, salt, and pepper on each layer. Mix mayonnaise and grated cheese and pour over tomatoes.

Bake for 30 - 40 minutes or until top is golden brown.

You may substitute fresh basil, oregano, thyme, and any other fresh herb for the Italian seasoning for a fresher taste. I use the dry seasoning because it contains a lot of herbs.
