5 lbs. russet potatoes
8 oz Neufchatel reduced fat cheese
1 C sour cream
1 T butter or margarine
Salt and pepper to taste
Olive oil
1 head garlic, diced

Directions:
Directions:
Peel potatoes, cook and drain
Mash with potato masher
Add remaining ingredients including garlic
Beat with hand mixer until smooth
Serve immediately or transfer to shallow baking dish and refrigerate for up to 2 days
Reheat 30 minutes @ 350º
To roast garlic - or substitute chopped garlic in jar
Slice off top of whole garlic to expose cloves
Place in baking dish - drizzle with olive oil - cover with foil
Roast 30 minutes and crush
