9 eggs
1/4 tsp. salt
1 tsp. vanilla
1 cup sugar
1/3 cup water
1/3 cup oil
1 cup flour
1/2 tsp. cream of tartar

Directions:
Directions:
Preheat oven to 325º. Separate eggs whites/yolks. In a mixer, mix yolks with salt, vanilla, sugar, water, and oil. Beat for about 15 minutes. In another bowl, beat eggs whites with cream of tartar until stiff. Add yolk mixture to egg whites and fold. add flour and mix thoroughly, but do not mix with a mixer...just incorporate. Pour into tube pan and bake 1 hour.

This cake can be enjoyed with your favorite hot drink. Better yet, glaze some strawberries, pour over a slice and top with whipped cream! This is how we typically enjoy it.
