PEEL EGGPLANT & CUT INTO PIECES
CUT ZUCCINES INTO PIECES
CORE & CUT PEPPERS IN SLICES & CROSS CUT
CUT ONION IN QUARTERS THEN SLICE
CUT GARLIC INTO BIG CHUNKS
PUT EVERYTHING INTO LARGE SALAD BOWL, ADD VINEGAR AND OIL AND MIX.
COOKIE SHEET OR ROASTING PAN (LINE WITH FOIL) THEN SPRAY WITH PAM.
ADD MIXTURE SPREAD EVENLY BAKE AT 375 FOR 20 MIN. THEN STIR.
ADD A LITTLE MORE VINEGAR & BAKE ANOTHER 20 MIN.
WHEN IT LOOK BROWNISH YOU CAN REMOVE IT.
I LIKE TO WAIT TILL IT REALLY DARK
