2 lb.. ricotta cheese
1 lb. mozzarella, diced
1/2 lb. Genoa salami, diced
1 pepperoni diced
1 cup grated cheese
6-8 eggs depending on how big the eggs
1 egg for egg wash

Crust:
2 1/2 cups flour sifted
1/2 cup crisco or lard
6-8 tbs. ice water
2 tsp. regular black pepper
salt

Directions:
Directions:
Mix crust and put in fridge. You can make the crust in advance. Roll crust between wax paper and put in spring form pans. You can use one large one, but it cooks more evenly in two pans.

Preheat oven to 350. Mix up filling. Put in crust. Put on top crust. Make sure top crust is sealed well. ("roll the two ends tighter than a regular pie"). Prick top with fork. Cook 20 minutes, then check and brush top with egg yolk. Continue to Bake at 350. Total cook time should be 50-60 minutes. Should be golden on top.

You can vary the meats to your liking.
