1-1 1/2 lbs Ground Meat
2-3 Stalks Celery
1 Lg. Onion
Carrots (7-8 baby ones)
1- 16oz. Bag Frozen Chopped Spinach ( thawed with excess liquid squeezed out)
1/3 Cup Di Pepe Pasta
7-8 Cups Chicken Broth

Directions:
Directions:
Make tiny "meatballs" and brown them in a frying pan. Drain and set aside. Using a food processor " Pulse" onion, celery and carrots until finely chopped. Place in a large (5qt) Soup pot with 1/2 Stick melted butter. Cook until onions start to get clear.
Add chicken broth. Add meatballs and spinach. Bring to a boil. Add pasta. Cook until pasta is tender, about 10 min.
