1/4 cup barley
10 cups vegetable stock
2 cups corn kernels, fresh or frozen
1 14.5 oz can of diced tomatoes with juice
4 large carrots, cubed about 2 cups
1 large baking potato, peeled and cubed
1/8 tsp sea salt
2 cups green beans

Directions:
Directions:
1) Rinse barley and drain,
2) Place all ingredients except green beans in a pot and heat over medium high heat. Bring to boil, then turn down to a simmer
3) Cook for 30 min, stirring occassionally. Add green beans and cook until potatoes are tender and barley is soft about 15 minutes more. Barley expands the longer it sits in liquid.
