Pastry for 2 crust pie or purchased frozen tart shells.

2 C. currants or raisins or even chopped walnuts or pecans
1Tbsp water
2 C. brown sugar
2 Tbsp butter
2 beaten eggs
1 tsp nutmeg or vanilla

Directions:
Directions:
Combine currants or raisins and water in a microwaveable container. Microwave a couple of minutes until the fruit is hot and soft and plumped.

Mix together: brown sugar, beaten eggs, soft butter and flavouring

Add to hot currants. Mix well, pour into tart shells and bake @ 350 - 375F for 10 minutes.

This is an old recipe. My Mother would make the pastry first, roll it out flat, cut
circles with a knife and a small bowl, set the pastry into cups in a muffin pan, smooth out the edges then fill and bake about 15-20 minutes. They were like small pies. Instant pastry shells are much more convenient and make the recipe quick and easy. Experiment to get the size and number you want. Recipe increases easily. Currants are traditional, followed by raisins.
