Sauté in a huge pan:

1/2 inch extra virgin olive oil
1 big green pepper, chopped up
1 big white onion, chopped up
1 bunch garlic, chopped up
1 can mushrooms
3 bay leaves

Add:
3 - 28.5 ounces canned whole tomatoes
3 - 28.5 ounces stewed Italian tomatoes
2 lg cans tomato paste (90 oz)
1 t oregano
1/2 t thyme
1 t Italian seasoning
1/2 bottle Chianti

Bring to a light bubble and turn to low heat for 24 hours. Add 1/4 c sugar and salt and pepper to taste. Couple of hours before eating, add cooked 1-2 lbs Italian sausage.
